Green apple cashew cream

Take 1 big green apple without seeds and 1 cup of cashew kernels.
Extract the juice from the apple and pour it into the mixer with the cashew kernels.
Have the mix rest into the frigde to get a creamy texture and serve it spread on wholemeal crackers.
Aids your memory and is a real tonic for your brain!

  Spinach salad with cashew kernels

Chop 1/2 lb bacon and fry until crisp. Drain on paper towel to remove as much excess fat as possible. Wash 5 ounces spinach and 1/2 head lettuce then tear leaves into bite size pieces. Place in salad bowl. Add 1/2 cup cashew pieces, 1/2 cup grated mozzarella cheese and crumbled bacon. Toss when ready to serve. Serve with 2/3 cup oil, 1/3 cup apple vinegar, 1/4 teaspoon dry mustard and salt dressing. Dust the salad with poppy seeds.


Spicy cashews 

Take 200 g of natural cashew kernels and put them in a large bowl; add 4 tablespoons of extra-virgin oilve oil and mix so that the oil adheres well. Add 3 tablespoons of paprika, 1 teaspoon of salt and half a teaspoon of chilli powder; mix again, preferably with your hands, until the cashews are well coated with the spices. Pour them onto a baking tray covered with baking paper and add, as a final touch, 4 tablespoons of sesame seeds (black or white). Bake in the oven at 200°, grill function, for 5 minutes max, taking care that the sesame does not burn. Serve the cashews freshly warm.
